I’m having such an apple phase at the moment. Everything I cook has got apples in it. I just love the flavour; it works so well baked there’s just something about it that screams autumn and festivities. I love it! These Easy Apple and Cinnamon Blondies are gorgeous. They taste almost like a fantastic apple pie with a hint of cinnamon. But, with that magnificent brownie moistness and crunchy top. They might be a new favourite.
While Easy Apple and Cinnamon Blondies are awesome as they are and perfect with an afternoon coffee, me and Hunky Husband also really enjoyed them with a bit of cream on top, eaten like a dessert. Yummy!
- 115g Melted butter
- 3 Medium Apples
- 1tbsp Lemon juice
- 100g Caster sugar
- 100g Light brown sugar
- 1 Egg
- ½ tsp Vanilla extract
- ½ tsp Baking powder
- Pinch of salt
- ½ tsp Nutmeg
- ½ tsp Cinnamon
- 175g Plain flour
Preheat the oven to 180 degrees and line a baking tray with greaseproof paper.
First, peel, core and chop the apples into 1cm chunks. I had quite a range in our fruit bowl. My apple phase means we’re buying lots of them. So, I don’t even think these three were from the same batch. Use whichever you like the most. You could even use apples that have been left too long and have gone a little soft. They’ll still taste great baked and make perfect Easy Apple and Cinnamon Blondies.
Next, toss the apple chunks in a bowl with the lemon juice. Coating them well will stop them browning while you’re preparing everything else.
Put the sugars, egg, and vanilla in a large mixing bowl and whisk. I used a hand whisk; it was easy enough.
Next, add the melted butter and whisk again until the colour is even.
Weigh the flour into a bowl, taking 2tbsp out to toss with the apples. They’ll go a bit weird and pasty. This is fine!
Add the cinnamon, nutmeg, baking powder and salt to the flour and sift into the other mixture.
Fold together well and add the apples. Now, make sure you stir well so that the apples are all well coated in blondie mix. Make sure you dig down deep to get everything mixed well.
Tip the mix out into a lined baking tray. Ours is about 6×12. Spread evenly using the back of a spoon.
Bake for 25 minutes until pale golden brown. Then, remove from the oven but leave in the tray to cool for 20minutes, before removing.
Once ready the top of your Easy Apple and Cinnamon Blondies has that beautiful brownie cracked paper look, and the apple chunks ooze out of the sides. They’re amazing, just lightly spiced with cinnamon and nutmeg. A gorgeous winter treat.

- 1 tbsp Lemon juice
- 100 g Caster sugar
- 100 g Light brown sugar
- 1 Egg
- 1/2 tsp Vanilla extract
- 1/2 tsp Baking powder
- Pinch of salt
- 1/2 tsp Nutmeg
- 1/2 tsp Cinnamon
- 175 g Plain flour

- Toss in a bowl with the lemon juice
- Add the sugars, vanilla and egg to a mixing bowl and whisk
- Add the melted butter and keep whisking until the colour is even
- Weigh the flour into a bowl and mix 2tbsps in with the apples
- Add the nutmeg, cinnamon, salt and baking powder to the flour and sift into the sugar mix
- Fold together well
- Add the apples and mix until well coated and even
- Tip into the baking tray and spread evenly
- Bake for 25 minutes until pale golden
- Leave to cool in the tray for 25 minutes before removing, but leave to cool fully before cutting
