We recently made a cheesy chicken fajita pasta. It was awesome. But a bit strange. Like my head is so used to fajita seasoning and spices on Mexican food, it was a shock to taste it on pasta. I love things like this. We eat Mexican all the time and I love pasta so putting the two together was incredible. I love it when the combination of flavours almost shocks your taste buds.
For that recipe, I made my own fajita seasoning, which you can find here. We made quite a large portion so had plenty left. Instead of using it on fajitas I really wanted to try something else a little different.
I’m a huge fan of a one pan bake. I love just throwing chicken, sausages or halloumi into a pan with veggies, potatoes and some spices (usually smoked paprika and cayenne pepper) and letting it bake. There’s hardly any effort or washing up and the flavours and textures blend together to create a gorgeous meal filled with nutrients and colour.
So, I made a chicken fajita bake. We’d been out the night before, for the first time in a year and then for a huge walk during the day which meant we were a bit tired, hungover and achy. We needed a big comforting meal but didn’t want to spend a long time stood in the kitchen. This chicken fajita bake was perfect!
- 3 tbsp fajita seasoning. Either store bought or homemade
- 4 Chicken breasts
- 3 Courgettes
- 1 Large onion
- 500g New potatoes
- 3 Peppers
Firstly, preheat the oven to 180 degrees and put a few tablespoons of oil into a deep baking tray.
Next, roughly chop the peppers (any colour) onion, courgettes and potatoes. I slice my potatoes into 4 if they are large as these take the longest to cook. If you just halve them it takes a lot longer.
Throw all these ingredients into the baking tray before nestling the chicken breasts on top. Drizzle with oil and sprinkle over 2tbsp of fajita seasoning.
Place in the oven and bake for 30 minutes. At this point, give it a good stir and sprinkle over another tbsp of seasoning. If it seems dry or is sticking to the pan, add another drizzle of oil.
Bake for a further 30 minutes before stirring again. The fajita seasoning can be quite spicy, so make sure there aren’t any lumps as you stir. Check to see if the chicken is cooked through by slicing into the centre of the largest breast. Stab a potato to see if they’re cooked and bake for longer if necessary.
One of the best things about recipes like this chicken fajita bake is that it gives you options. I love courgettes so always put 3 in. You don’t have to. Miss out bits you don’t like, add other things you do. Experiment and try your own flavour combinations!
Chicken Fajita Bake Recipe
- • 3 tbsp fajita seasoning. Either store bought or homemade
- • 4 Chicken breasts
- • 3 Courgettes
- • 1 Large onion
- • 500g New potatoes
- • 3 Peppers
- • Oil
- Preheat the oven to 180 degrees and add 2 tbsp of cooking oil to a deep baking tray
- Chop the vegetables and slice the potatoes
- Add the the baking tray and nestle the chicken breasts on top
- Drizzle with oil and sprinkle over 2 tbsp of fajita seasoning
- Bake in the oven for 30 minutes
- Remove from the oven and stir well.
- Add more oil and fajita seasoning if required
- Bake for a further 30 minutes
- Stir, and check to see if the chicken and potatoes are cooked
- Bake for longer if needed and serve straight from the oven
