Baking with the Kids: Chocolate Orange Halloween Cupcakes

The Boy has recently started getting more involved in the kitchen. I think I’ve mentioned before that as a toddler he loved helping with cakes and things, but then seemed to lose all interest for a while. In the last few weeks, he’s been asking to help. We’ve made pizzas and biscuits together, so it’s something I really wanted to carry on. I take the Bobsy out when he’s at school, and a lot of the things he likes to do, cinema and swimming, etc. I barely get a chance to do with him, as Bobsy is a bit young or I can’t take them both on my own and husband works weekends. So, I’m always on the lookout for something that me and the Boy can do together.

These cupcakes aren’t really halloweeny. I’ve stuck some Halloween mix Haribo (yum btw!) on top of them so I can get away with saying they’re chocolate orange Halloween cupcakes. But they’re not really. You see, I don’t hugely do Halloween. Scratch that, I don’t do Halloween at all. My mum and Dad never wanted me to as a kid; there was a lot of “it’s begging” or “it’s an American holiday” and to be honest, I was never that bothered. I’d rather not take mine trick or treating, but if he ever asks, I might. He hasn’t asked yet. We do a few crafts and a bit of baking, and that seems to keep him happy.

Ingredients

For the Chocolate Cupcakes

  • 150g Plain Flour
  • 200g Caster sugar
  • 50g Cocoa powder
  • 1tsp Baking powder
  • Pinch salt
  • 2 Eggs
  • 200g Butter

For the Buttercream

  • 100g Butter
  • 200g Icing sugar
  • 1tsp Orange extract
  • Few drops orange food colouring
  • Haribo Halloween mix sweets

Notes

I always find that food colouring leaves a bit of a bitter, almost chemically taste if you use too much. But, to get the colour, you literally need a few drops. So make sure that you add a few little bits, and mix thoroughly before you assess the colour and add more.

You could, of course, make these without the Halloween sweets any time of the year, they are still an easy and tasty cake that’s perfect for baking with younger kids.

Method

Preheat the oven to 160 degrees and line a muffin tin with cake cases. Rather annoyingly this mixture makes around 16 cakes, and most muffin tins are 12. I did two batches.

Cream together the butter and sugar in a large mixing bowl until you’ve got a smooth mixture. Then add both eggs and mix.

Weigh the flour and cocoa into another bowl, add the baking powder and salt and sift into the egg mixture. Fold together well until the colour is even and it looks beautifully chocolately.

At this point, my tiny helper kept trying to stick his fingers in and eat it all! There was chocolate cake mix everywhere.

Spoon the mixture into the cake cases evenly, a good dollop in each one and bake in the oven for about 15 minutes.

Leave the chocolate cakes to cool on a wire rack for around 30 minutes before you add the icing.

To make the icing, literally just mix all of the ingredients in a bowl. Making sure you only add drops of colouring at a time.

When the cakes are cool, pipe or spoon on the icing and add a sweet to the top. Gorgeous.
