What We Ate Week Seven

Look I’ve changed the titles of my meal plans. Coming up with a catchy subtitle every week was beyond my creativity. So, from now on, it’s what we ate this week. I must also confess that while I didn’t post any meal plans over the Christmas period, I carried on writing them. So, what you are reading now is actually what we ate on a week in November. This isn’t me attempting to tell you any lies, I just gave myself a few weeks gap, so I could get the new recipes I try published before the meal plan that mentions them. Or I’d either need to post ten times a week or write “check back in a few weeks once I’ve had time to write up the recipe” Just not practical.

Monday – Spaghetti Bolognese

Spaghetti Bolognese is The Boy’s favourite, and it’s so incredibly easy to do. It’s probably one of those boring staples everyone has all the time, but it’s tasty, full of veg and really easy. There’s also always plenty of leftovers to freeze for another day.

When it comes to leftover spag bol, we often freeze them in portions that are just for the kids, so they’ve got something other than fish fingers and chips if we ever fancy having something grown up or sending them to bed early for a date night.

Tuesday – Sausage Casserole

I work quite a bit on Monday and Tuesday and have to do the school runs and childminder drop-offs on my own. So dinner is normally something quick and easy, or something that can just be thrown in the oven and left to cook on its own. Sausage casserole is perfect for this. It’s also unbelievably cheap which is always a bonus. I throw some chopped veg (there have to be courgettes, I’m in love with courgettes), potatoes and sausages in a large baking tray, drizzle with oil and a little smoked paprika and bake for an hour. Perfect.

Wednesday – Chicken Tikka Masala

Since starting to experiment with making my own curries, we’ve stuck to our favourites. If ever I ask what the kids and Husband want it’s “Korma” or “butter chicken”, which is strange really because we do like spicy food. This week be branched out a little bit, and I had a go at Chicken Tikka Masala with homemade garlic and coriander naan bread.

Thursday – Chicken and Bacon tagliatelle in a Creamy Garlic Sauce

Since I’ve started trying more new things, we’ve developed a habit of only having them once. I try something, spend ages working on the recipe, we eat it, I blog it, then next day we have a cottage pie, and I start planning my next new thing. Which is daft because we’ve loved everything I’ve made. So, I’m trying to repeat meals more. Me and husband loved this creamy pasta, so this seemed a great place to start.

Friday – Pork Chop Teriyaki

Pork chop is one of those things I’ve always got in the freezer. And we always have with mash and veg. I did some with apple and a mustard glaze a while back that was gorgeous, but I wanted to try something a little different. Teriyaki isn’t a sauce I’ve had very often, but I managed to knock one up out of ingredients we had in. I served it drizzled over my chops with brown rice and a pack of stir fry veg. The kids hated it, so perhaps a new date night dish.
