Ok, that’s a bit of a lie. This one wasn’t 3 ingredients. It was 6. But, only because I didn’t have enough self-raising flour so had to use plain with some baking powder and I added some icing. But, if you just made the cake and had the right flour this would indeed be a 3 ingredient pineapple loaf cake! It’s the perfect thing to make when you’ve got no ingredients but fancy a treat. Because who hasn’t got an old tin of pineapples at the back of their cupboard?!
I love a loaf cake. For some reason when I try to make a circular cake it fails horribly. Loaf cakes I can do! This pineapple loaf cake is sweet, moist and filled with yummy chunks of pineapple which make it a completely acceptable breakfast! Just ask Hunky Husband!
- 250g Self-raising flour
- 250g Caster sugar
- 400g tin of pineapple chunks with juice
For the icing, I save 3 Tbsp of the pineapple juice and mix it with 1 tbsp of butter and 200g of icing sugar. I have not put these in bullet points, so they don’t count and this is a 3 ingredient pineapple loaf cake!
Our tin of pineapples was I think 550g, but both kids had a good handful before I started and we didn’t quite use all of the juice, I think 400g should be about right.
Preheat the oven to 180 degrees and grease a loaf tin with butter.
Sieve the flour into a large mixing bowl, add the pineapple chunks and juice and the sugar. Mix together.
That’s it. It should be quite runny, like a banana loaf. So, don’t worry. If you want it a little smoother, use a fork to mash up the pineapple chunks.
Pour the mixture into the loaf tin and bake in the oven for 1 hour.
When it’s cooked, I run a knife round the outside to loosen in and then leave it on the side to cool before mixing the icing and pouring over. This allows the icing to run down the sides a little. This icing recipe is very sweet, so if you prefer, use less juice (or none at all) and more butter for the perfect topping to your pineapple loaf cake.
It’s not the prettiest cake in the world, but it’s moist, sweet and refreshing as well as incredibly easy to make.
3 Ingredient Pineapple Loaf Cake
- 250 g self-raising flour
- 250 g Caster sugar
- 400 g tinned pineapple and juice
- preheat the oven to 180 degrees and grease a loaf tin
- Add the ingredients to a bowl and mix together
- Pour into the loaf tin
- Bake for 1 hour
- Leave to cool
- If you want to ice the cake, I use 3tbsp of pineapple juice, 1 tbsp of butter and 200g of icing sugar, mix together and pour on to the cooled cake
